  1. I steam broccoli, cauliflower, and baby carrots.

Everyone in my family LOVES swiss chard prepared this way (use rainbow chard – so much prettier!): https://www.allrecipes.com/recipe/148889/sauteed-swiss-chard-with-parmesan-cheese/ But then what doesn’t taste good when made with butter, olive oil, garlic, onion, wine, parmesan and a little lemon?🤣

  3. Brussels sprouts cut in half with a little olive oil, Parmesan cheese, salt, and pepper baked until crisp on the edges. My kids love them too.

  28. Easiest veggie prep. Corn on cob. Place a little butter and wrap in parchment paper. Twist at ends. ( like candy wrapper) microwave 2:30 seconds. It’s amazing how it works! Only do one at a time.

  32. I’m addicted to roasting vegetables in the oven lately! My faves are baby carrots with a drizzle of olive oil, honey and sea salt, OR Brussel sprouts and sweet onions with olive oil, sea salt, honey! Delish!

  34. I love spinach baby tomatoes mushrooms onion garlic and kale. I saute in coconut or avocado oil and when nearly don put a dash of pink himilayan salt and balsamic vinegar on it. Delish!!!! I would say I eat this about 4 days a week even before going gluten free. Sometimes I add broccoli or asparagus also.

  44. I love to cute up zucchini, squash, mushrooms and sweet potatoes – put them in a pan, drizzle with EVOO, salt & pepper and roast them in the oven. Goes perfectly with grilled chicken! I also love to make healthy alfredo sauce with cauliflower!

  47. An easy, healthy, inexpensive, low carb lunch or dinner is bagged coleslaw, peanuts, craisins and Brianna’s popyseed dressing. Yum!! I’ve also used cut up apples, and canned mandarin oranges. You can add grilled chicken too.
